The tomato based sauces are the most popular. The mustard based is popular in South Carolina mainly in the midlands around Columbia. The vinegar based sauces and versions of it are used to make the famous Lexington Style barbecue.

Barbecue should be cooked slowly over low heat.

The sauce should be added near the end of cooking so you will get the charcoal flavor in the meat and the sauce will not burn.

This is the most popular of the barbecue sauces. The meat should be cooked over low heat and the sauce should be added near the end of cooking to keep it from burning. You will have to try different heat and times to suit your taste when cooking over charcoal or open flames. Sauce should be brushed over the meat when removed from the heat.

Vinegar Based Barbecue Sauce:

This sauce has it's roots in North Carolina. Different versions of the vinegar based sauces are used to cook barbecue. It was made famous in Lexington, NC, home of the famous Lexington Style barbecue. This sauce is also an excellent marinade and it can be applied earlier in the cooking process with out burning.
